Potato soup in a new way: how to prepare a delicious restaurant dish for lunch at home

The usual soup for lunch is chicken broth with meat and vegetables. Thin pasta is also added to make it more hearty. But if you're already tired of this dish, you can try another idea: potato cream soup with cheddar cheese and sun-dried tomatoes.

The idea of making potato cream soup for lunch was published on the Instagram page of food blogger Natalia with the nickname talli_sun. It will turn out just as good as in a restaurant.

Ingredients:

  • potatoes - 400 g
  • broth (or water)
  • cream - 100 ml
  • cheddar cheese - 50-60 g
  • Parmesan cheese - 50 g
  • blue cheese - 70 g
  • nutmeg - 0.5 tsp.
  • salt
  • sun-dried tomatoes and green olives for serving

Method of preparation:

1. Peel and dice potatoes.

2. Pour water or broth to cover the potatoes by about two fingers.

3. Add salt and cook until tender.

4. Beat the potatoes until smooth.

5. Pour in cream.

6. Add grated cheddar, blue cheese and nutmeg.

7. Bring to a uniform mass over low heat, stirring.

8. Leave to stand for 10-15 minutes under the lid.

9. Sprinkle with grated Parmesan cheese when serving. You can also add chopped olives and sun-dried tomatoes.
