Light salad with duck breast and greens by Yuliia Olefir: prepared without mayonnaise
The meat that is ideal for making a light salad is duck breast. It is very tender, juicy and satisfying. The dish can be seasoned with just olive oil, or you can add a white wine and orange sauce.
Blogger and writer Yuliia Olefir (yuolefir) shared the idea of making a duck breast salad on her Instagram page. You just need to fry the breast in a frying pan.
Ingredients:
- duck breast
- salad mix
- 1-2 tangerines
Ingredients for the sauce:
- 1 orange
- 20 g of white wine
- 1 spoonful of honey
Ingredients for the dressing:
- salt/pepper
- olive oil
- juice of 1/4 lemon
Method of preparation:
1. Make a cross-shaped cut on the skin of the breast (this is to remove excess fat).
2. Season with salt and pepper.
3. Put the breast skin side down on a dry, well-heated frying pan and fry well.
4. If there is too much fat, remove the excess.
5. When the skin is well-fried, turn it over and fry for another 3-4 minutes.
6. Then wrap the breast in foil and put it in an oven preheated to 200 degrees for 10 minutes.
7. Meanwhile, prepare the salad mixture: season with salt and pepper, and add olive oil and a little lemon juice.
8. Put it on a plate.
9. Prepare the sauce in the frying pan of the breast, removing the excess fat: juice of one orange, orange zest, 20 g of white wine and a tablespoon of honey.
10. Slice the breast, put it on the greens, pour the sauce and add the tangerine (or orange).
