Light salad with beets and nuts: an excellent dish
Beets are a versatile and always available vegetable that can be used to make light salads for every day. Beets are especially tasty when combined with onions, prunes, raisins, dates, spices, garlic, sour cream, and some other vegetables.
Food blogger Tetiana Perchik (tanya.perchik) shared a recipe for a light salad with beets, dates, and nuts on her Instagram page.
Ingredients:
- beetroot - 500 g
- prunes/dates - 100 g
- walnuts - 100 g
- salt
- homemade mayonnaise - 100 g
Method of preparation:
1. Boil the beets and grate them.
2. Chop the dates/prunes and add to the beets.
3. Chop the nuts and add to the salad.
4. Add salt and season the salad with homemade mayonnaise.
The food blogger also shared a recipe for healthy homemade mayonnaise, which is ideal as a salad dressing.
Ingredients:
- oil - 200 ml
- eggs - 1 pc
- sweetener - 1 tsp.
- lemon juice - 1 tsp.
- mustard - 1 tsp.
- salt - 0.5 tsp.
Method of preparation:
1. Combine all ingredients in a bowl and beat with a blender until smooth.
