"Anna Pavlova" is a world-famous dessert that has a New Zealand origin. It can be a small cakes or a whole cake. The texture is very airy because it contains a delicate crispy meringue that resembles marshmallows. Despite the sophistication of this culinary masterpiece, it can also be prepared at home.

Ingredients:

  • egg whites – 4 pcs.
  • sugar – 150 g
  • corn starch – 4 tsp.

Ingredients for the cream:

  • mascarpone – 250 g
  • Powdered sugar – 30-40 g
  • cream 33% – 30-40 g

Method of preparation:

1. Add a pinch of sugar to the egg whites and beat at medium speed until fluffy. While continuing to beat, add sugar several times and beat until stiff peaks form. Add the starch and combine at the lowest speed for 1 minute.

2. Turn on the oven to 100 degrees.

3. Put the whipped whites in a pastry bag with a nozzle (if not, you can use a spoon) and form the bottom and walls on a baking sheet covered with parchment. The result is "nests".

4. Dry the meringues for 90 minutes. Possibly longer, depending on your oven, it is important to dry them well, after baking leave them in the oven until they cool completely.

5. For the cream, whip everything to strong peaks and fill the "nests" with cream using a pastry bag or spoon.
