Lean potatoes with mushrooms and vegetables: Kostiantyn Grubych cooked them together with the housewives of Rivne region
Many people in Ukraine have long observed the Easter fast. Therefore, recipes for special dishes that can be eaten during this period are passed down from generation to generation. One of the most popular is fried potatoes with vegetables.
The idea of cooking lean potatoes with vegetables and mushrooms was published on the Facebook page of the famous Ukrainian TV presenter Konstiantyn Grubich. This dish will be very convenient to prepare outdoors.
Ingredients:
- potatoes – 1 kg.
- carrots – 2 pcs.
- onions – 2 pcs.
- mushrooms – 300 g
- bell pepper – 1 pc.
- green onions
- oil for frying
- salt, garlic, pepper to taste
Method of preparation:
1. Peel the potatoes. If large, cut in half.
2. Add salt and pepper to the chopped potatoes.
3. Add young chopped carrots.
4. Drizzle with oil.
5. Mix everything thoroughly.
6. Heat a pot of oil (or a frying pan if cooking indoors).
7. Add the potatoes to fry. Stir occasionally so that they do not burn and cook evenly. When the pieces are slightly browned, cover with a lid.
8. During this time, chop the onion, peel and chop the mushrooms.
9. When the potatoes are almost ready, add the pre-chopped ingredients: mushrooms, onion strips, and pepper strips. Add a little salt and pepper on top.
10. Mix everything well.
11. You can add a little more oil to make sure everything is well-fried.
12. Crush the garlic in a mortar.
13. Add it along with the herbs at the end of cooking.
14. Serve potatoes with pickled vegetables: tomatoes, cucumbers, cabbage.
