How to stuff peppers in an original way: if you are tired of the classic filling

Stuffed peppers are not only a delicious and nutritious dish, but also incredibly beautiful. This dish is also interesting because it can be prepared in the fall, during the peak season of bell peppers, when they are sold at the most attractive price, and frozen. Then all you need to do is take the stuffed peppers out of the fridge and stew them thoroughly.

But what to do when you're tired of the usual stuffing of rice and minced meat? Well, you don't have to give up making stuffed peppers. In this case, you should experiment and try something new as a filling. This is exactly what Pani Stefa advises.

Ingredients

  • Colored peppers - 4 pcs
  • Rice - 50 gr
  • Smoked mussels - 100 gr
  • Mexican vegetable mixture
  • Onion - 1 pc
  • Garlic - 2 cloves
  • Tomatoes in their own juice - 200 ml
  • Salt and pepper
  • Oil
  • Greek yogurt
  • Greens for serving

How to cook

1. Cut off the tops of the peppers, peel out the middle and steam with boiling water.

2. Finely chop the onion and garlic and fry in a frying pan with oil.

3. Add rice to the vegetables, fry for a few minutes and pour 150 ml of boiling water. Wait until the rice absorbs the water.

4. Add the mussels and Mexican mixture to the rice. Mix thoroughly.

5. Stuff the peppers. Pour tomatoes, bring to a boil and cook for 15 minutes.

6. Serve with Greek yogurt and greens.
