Traditional rolls are a dish of nori, rice, fish, and cream cheese. But this appetizer has also found its interpretation as a dessert. It is based on a simple pancake, which is wrapped in a delicate cottage cheese filling and lots of juicy fruit.

Ingredients for pancakes:

  • eggs - 1 pc.
  • milk - 150 ml
  • rice/wheat flour - 25 g
  • corn starch - 25 g
  • cocoa - 10 g
  • sugar - 2 tbsp
  • salt - a pinch
  • olive/vegetable oil - 5 ml

  • cottage cheese - 300 g
  • sour cream - 4 tbsp
  • powdered sugar - 2 tbsp
  • vanilla sugar - 10 g
  • fruits / berries

1. Combine eggs, milk, sugar, and salt in a bowl. Sift in the flour, starch, and cocoa. Mix with a mixer until smooth and free of lumps. Add the oil and mix again.

2. Before the first pancake, grease the frying pan with oil. And before each pancake, stir the batter with a ladle, because starch settles to the bottom. Bake the pancakes on both sides. Let them cool down.

1. Mix cottage cheese, powdered sugar, sour cream, and vanilla sugar in a bowl. Beat with an immersion blender to avoid lumps of cottage cheese.

3. Put the curd mass, fruit/berries on the pancake and roll it into a roll. Put it in the refrigerator for 30 minutes.
