How to make homemade puff pastry for croissants: better than store-bought
It's very easy to make puff croissants like in a coffee shop at home. The dough requires a special technique, but if you follow the cooking instructions, anyone can do it. The pastries are very fluffy and fragrant.
The idea of making homemade sweet croissants was published on the Instagram page of a food blogger with the nickname recepty_przepisy. The butter must be soft.
Ingredients for the dough:
- warm milk - 150 g
- warm water - 150 g
- pressed yeast - 24 g
- sugar - 60 g
- salt - 10 g
- flour - 500 g
- soft butter - 40 g
Additional ingredients:
- cold butter - 250 g
- egg for greasing
Method of preparation:
1. Combine water and milk in a bowl, add the yeast, and stir until the yeast dissolves.
2. Then add sugar and salt and stir.
3. Gradually add flour and knead the dough.
4. Add the butter to the almost ready dough in parts and knead well each time.
5. Cover and leave at room temperature for 2 hours.
6. Then roll out the dough into a rectangle.
7. Separately, put pieces of butter on the parchment, forming a square (its size should be 2 times smaller than the size of the dough rectangle).
8. Spread the butter over the dough, wrap the dough, and roll it out again into a rectangle.
9. Fold in 3 layers.
10. Wrap in parchment and refrigerate for 30-40 minutes.
11. After that, roll it out again into a rectangle and fold it into 5 layers again, then refrigerate for the same time.
12. Repeat this procedure one more time, then roll out the dough into a flat rectangle, if necessary, trim the edges.
13. Cut into 6 strips, cut each strip obliquely to form two triangles.
14. Make a small incision in the larger part of the triangle and form croissants.
15. Put them on a baking sheet and leave for 20-30 minutes.
16. After that, brush with egg and bake at 220 degrees for 17-20 minutes until tender.
