How to make delicious muffins from ordinary carrots: with nuts and raisins

Carrots are a fairly simple vegetable that we use to prepare a variety of dishes almost every day. Most often as a fry. But right now, this product is as juicy and healthy as possible, so it can be the basis for your new culinary masterpieces. Another option is simple carrot muffins.
The idea of making carrot muffins was published on the Instagram page of food blogger Anastasia Lysak (an.lysak).
Ingredients:
- wheat flour – 130 g
- sugar – 120-140 g
- baking powder – 10 g
- salt – a pinch
- cinnamon – 1 tsp.
- oil – 80 ml
- orange juice – 60 ml
- orange – 1 pc (zest)
- carrots – 250 g
- walnuts – 100 g (roasted)
- raisins – 50 g
Method of preparation:
1. Roast the nuts for 10 minutes at 180 degrees
2. Mix the flour, sugar, baking powder, salt, cinnamon, oil, orange juice, zest, carrots, roasted nuts (you can chop them a little), and raisins thoroughly.
3. Put into molds and bake for 35-40 minutes at 170 degrees with convection.
