Healthy chickpea and carrot hummus: an elementary recipe from a nutritionist
Hummus is an excellent appetizer, the basis of which in the classic version is chickpeas and lentils. But it is worth noting that there are many recipes for this dish, and they all differ from each other. If you want to get a sharper taste, for example, you can safely add garlic, but nuts will add tenderness to the dish.
Nutritionist Yana Leheza shared a recipe for a delicious and healthy chickpea hummus with carrots, sun-dried tomatoes, and pine nuts on Instagram.
Ingredients:
- chickpeas – 100 g
- sesame seeds – 50 g
- olive oil – 2-3 tbsp
- sun-dried tomatoes – 6-7 pcs.
- carrots – 1 pc.
- garlic – 1 clove
- lemon juice – 1 tbsp.
- pine nuts – a handful
- salt, pepper, cumin – to taste
Method of preparation:
1. Soak the chickpeas overnight.
2. Boil the carrots.
3. Fry the sesame seeds in a frying pan, pour into a blender, pour in olive oil, and whisk.
4. Add the carrots, chickpeas, spices, part of the tomatoes, oil and whisk again until smooth.
5. Put the prepared hummus in a suitable dish, sprinkle with nuts, and add sun-dried tomatoes.
The best way to serve the hummus is with celery stalks, carrots, and toast.
