Easy pumpkin sponge cake: the idea shared by the chef

As long as you have a tasty and sweet pumpkin, add it to the base of a delicious pastry. You will get a very fluffy and fragrant cake for tea. It is especially delicious if you grease the baked cakes with cream.

The idea of making a light pumpkin pie was shared by the famous Ukrainian chef Volodymyr Yaroslavskyi (yaroslavskyi_vova) on his Instagram page. You just need to grate the vegetables for the dough.

Ingredients:

  • 600 g grated pumpkin
  • 260 g of sugar
  • 300-325 g of flour
  • 175 g of light raisins
  • 4 eggs
  • 100 g of walnuts
  • 100 g of vegetable oil
  • 100 g of butter
  • zest of 1 orange and half for juice
  • salt
  • 15-16 g of spice mix
  • cinnamon, ginger, anise, cloves, nutmeg and allspice can be added
  • 2 packs (20 g) of baking powder, salt

Ingredients for the cream:

  • 500 g of cream cheese
  • 100 g of icing sugar

Method of preparation:

1. Peel and grate the pumpkin finely.

2. Pour boiling water over the raisins and drain immediately.

3. Chop the nuts with a knife.

4. Add the melted butter and oil to the grated pumpkin, and then all the ingredients from the list.

5. Stir until smooth.

6. Put the mass in a baking dish covered with parchment and lightly oiled. Put in the oven at 175 degrees. Bake for about 55 minutes.

7. Check if ready with a wooden stick.

8. Let the cake cool completely.

9. To make the cream, mix the cottage cheese with powdered sugar.

10. You can make an even more airy buttercream: beat 100 g of butter, the juice of the second half of an orange and 130 g of powdered sugar well in a mixer and add 500 g of cream cheese and citrus zest.
