Crispy and juicy potato pies: the secret is in the dough

Today we are going to make pies with potatoes and mushrooms. They are very tender and juicy, with a crispy crust.

The recipe for these pies was shared by food blogger Alex Mil. On Instagram, he said that the secret of these pies lies in the dough.

Ingredients for the dough

  • Egg – 1 pc
  • Dry yeast – 7 g (or 21 g of live yeast)
  • Flour – 550 g
  • Salt – 1 tsp.
  • Sugar – 1 tbsp. 
  • Apple cider vinegar – 2 tsp.
  • Warm milk – 300 ml
  • Butter – 40 gr

Ingredients for the filling

  • Mashed potatoes with milk -–600 g
  • Fried mushrooms with onions – 150 g
  • Frying oil – 50 ml

Method of preparation

1. Add sugar, yeast, and salt to the warm milk and stir.

2. Add the egg and sifted flour. Knead the dough.

3. While kneading the dough, add oil and vinegar (it will make the dough more porous).

4. Cover the dough with a clean towel and leave it for 2 hours.

5. Prepare the filling. Add milk to the potatoes boiled in salted water and mash them to a puree.

6. Fry the mushrooms with the onion and add to the potatoes. Stir to combine. The filling is ready.

7. Divide the dough into 12-16 equal parts. Roll out each piece into a layer, put the filling, and form pies.

8. Fry on low heat on both sides until cooked.
