Budget potato casserole with pickles: be sure to cook for lunch

Fried potatoes with pickles are hard to resist. Many people like this combination. Also, these ingredients can be used to make a very simple casserole - it will be much more satisfying for lunch.

The idea of cooking a hearty potato casserole for lunch was published on the Instagram page of food blogger Daryna Ivanova (eatme_daily). While the dish is cooking, you can go about your business.

Ingredients:

  • potatoes - 1 kg.
  • sour cucumber - 3 pcs.
  • large carrot - 1 pc.
  • garlic - 2 cloves
  • large onion - 1 pc.
  • semi-hard or hard cheese - 1 pack
  • oregano or favorite spices - 1 tsp.
  • oil, salt and pepper to taste

Method of preparation:

1. Cut the potatoes into medium cubes.

2. Put the frying pan on high heat.

3. Add 3-5 tbsp of oil.

4. Preheat, put the potatoes and fry until golden brown (not cooked) for up to 10 minutes.

5. Chop the onion and fry in a frying pan with oil for 4 minutes.

6. Grate the carrots on a coarse grater.

7. Add to the onion.

8. Reduce the temperature to medium, fry, stirring occasionally, for 8-10 minutes.

9. A minute before cooking, add chopped garlic and stir.

10. Cut the pickles into small rings.

11. Put half the potatoes in an ovenproof dish.

12. Put half of the roast on the potatoes, and then all the cucumbers in one thick layer.

13. On top of the roast again, the last layer - potatoes.

14. Flatten and bake in a preheated 180-degree oven for 40 minutes until tender.

15. At the end, sprinkle with grated cheese and put in the oven until it melts.
