What to cook for Butter Week 2024: a recipe for delicious triple-filled pancakes
Pancakes can be made with kefir, milk, boiling water, and even mineral water, and with various fillings. It is very important to prevent the formation of lumps when preparing the dough.
The chef shared a recipe on Instagram for delicious triple-filled pancakes that will be very tasty.
Ingredients:
- 500 ml of warm milk
- 225 g of flour
- 40 g of butter
- 3 eggs
- 40 g of sugar or a substitute + 10 g of vanilla sugar
- a pinch of salt
For the filling:
- 250 g of ready-made poppy seed filling
- 200 g pitted cherries + 40 g sugar + 15 g starch
- 350 g of cottage cheese + 3.5 tbsp of sugar + 60 g of sour cream
Method of preparation:
1. Pancake batter: break the eggs, add sugar, vanilla sugar and a pinch of salt, and mix with a whisk. Pour in half of the warm milk and gradually add the flour, mixing the whole mass with a whisk and finally pour in the melted butter and the remaining milk, mix well.
2. Fry the pancakes on one side for 1.5-2 minutes and 15-30 seconds on the other side over medium heat.
3. Filling: add sugar and starch to the thawed cherries, cook stirring over low heat until thickened, and let cool completely. Add sour cream and sugar to the cottage cheese and beat into a paste with a blender.
4. Put two fillings on one pancake. One on one edge, the other on the other. Wrap each filling inside. Put the third filling on the other pancake, roll it up to a third, and put the pancake with the other two fillings and roll them together. This will create a perfect three-filled pancake.
