Homemade pates can be made from meat, fish, legumes, mushrooms, vegetables, and liver. For a bright flavor, butter should be added to any pate.

Chef Valerii Ponomar shared a recipe for a delicious fish pate with onions, carrots, and butter on Instagram.

Delicious and budget-friendly pate


  • Salmon trimmings – 1 kg
  • Carrots – 1 pc.
  • Onion – 1 pc.
  • Butter – 50 g
  • Salt, pepper
  • Nutmeg (pinch)
  • Smoked paprika – 1.5 tsp.
  • Cream 30-40% – 100 ml
  • Bay leaf – 1 pc.

Method of preparation:

1. Fry onions and carrots in butter until soft.

2. Cut the trimmings into small pieces to cook evenly and add to the vegetables, salt, pepper, bay leaf, and nutmeg, cook for 5 minutes over high heat.

3. Then reduce the heat to medium, add smoked paprika and cream, and cook for another 2 minutes.

4. Drain the mixture in a sieve and place in a blender. Blend the paste gradually adding the drained fat until you get the desired thickness of the paste.

5. Put in the refrigerator until it is completely set.
