Khachapuri is a hearty and tasty dish that can be easily prepared at home with cottage cheese, hard cheese, and herbs. It is very important to prepare the dough correctly. It can be made with kefir, water, and milk, without yeast, but with baking powder.

Ingredients:
For the dough:
- warm kefir – 140 ml
- yolk – 1 pc.
- salt – 0.5 tsp.
- sugar – 0.5 tsp
- oil – 15 ml
- flour – 250 g
- baking powder – 3 g
- soda – 1 g
For the filling:
- Suluguni cheese – 180 g
- egg white – 1 pc.
- salt – 0.5 tsp.
Method of preparation:
1. In a bowl, combine warm kefir, egg yolk, salt, sugar, oil and mix until smooth.
2. Mix the flour with baking soda and baking powder. Pour in the kefir a little at a time and mix, knead the dough with your hands. Then transfer it to a bowl and cover it with plastic wrap.
3. Grate the cheese, add the protein and salt, mix, divide into two parts, and form balls.
4. Divide the dough into two parts and form balls. Cover with a towel for 5 minutes. Roll it out again, put the cheese in the center, and twist it like a khinkali, turn it over and roll it out with a rolling pin to 20 cm in diameter.
5. Preheat a frying pan and bake the khachapuri on both sides under a lid over low heat.
