Almost everyone loves and knows how to cook soups. Buckwheat soup is a very simple and healthy one. To make it more filling, make it with meatballs. Fresh herbs and spices will add flavor to the dish.

Cook Olena shared on Instagram a recipe for buckwheat soup with meatballs, herbs, and spices that turns out to be very tasty.

Soup recipe

Ingredients:

  • Potatoes – 2 pcs.
  • Buckwheat – 2 tbsp. 
  • Fillet – 1 pc.
  • Carrots – 1/2 pc.
  • Parsley – a bunch
  • Onion – 1 pc.
  • Salt, lemon pepper, turmeric

Method of preparation:

1. Peel the vegetables and cut into cubes.

2. Bring water to a boil, add potatoes, carrots, and whole onions, add spices, and cook until potatoes are half cooked.

3. Rinse the buckwheat and add to the soup.

4. Cut the fillet and blend in a blender, add chopped parsley, turmeric, salt, and lemon pepper, mix well, and form into meatballs.

5. Add the cooked meatballs to the soup, stir, and cook until tender.

Sprinkle the soup with herbs when serving.
