Homemade pastries are one of the best and safest treats for tea and coffee. You can make pies, buns, cheesecakes, bagels, and donuts from buttery dough. For the filling, you can use any ingredients, starting with sweet ones: cottage cheese, berries, nuts, raisins, cinnamon, and fruit. For savory ones, you can use cabbage, meat, fish, vegetables, mushrooms, legumes, and hard cheese.

Cook Polina shared on Instagram a recipe for delicious, fluffy buns with cottage cheese filling, which will be the perfect tea treat.

Ingredients:

Dough:

  • flour – 500 g
  • sugar – 80 g
  • kefir – 250 ml
  • eggs – 2 pcs. +1 egg for greasing
  • yeast not dry – 18 g
  • vegetable oil – 50 ml

Cottage cheese filling:

  • cottage cheese – 400 g
  • sugar – 80 g
  • eggs – 1 pc.
  • vanilla
  • cranberries, raisins at will

Method of preparation:

1. Dough: add 1 tbsp of sugar and yeast to warm kefir and mix well. Add 2-3 tbsp of flour and mix. Cover and leave for 15-20 minutes in a warm place until a fluffy dough forms. When the dough is well risen, add the eggs and sugar and mix.

2. Next, add the flour in portions and knead the dough. Finally, add the oil in several stages and knead the dough well.

3. Shape the dough into balls, put them in a bowl, cover with a towel, and leave them to rise in a warm place for 1-1.5 hours.

4. After that, mix the dough well again and form into balls, place on a baking sheet, cover with a towel, and leave for 15 minutes.

5. For the filling: add sugar, eggs, and vanilla to the cottage cheese, mix, then add raisins and cranberries and mix again.

6. Using a glass dipped in oil, make a center in each bun and put 1-1.5 tbsp of the filling. Brush the buns with egg yolk and bake for 25-30 minutes at 180 C.
