Dessert to eat in the evening: rice pudding with citrus zest according to Klopotenko's recipe

Puddings are always an ideal light dessert, which is almost always based on milk, cocoa, and sugar. But you can experiment and change the taste of the dish, for example, make the base of rice, and add zest, which will set off the sweet flavor of the dessert.

Culinary expert Yevhen Klopotenko has shared a recipe for a delicious rice pudding with zest and egg white on his website. Everyone will love and it is easy to prepare.

Ingredients:

  • 2.5% milk – 500 ml
  • boiled rice – 350 g
  • orange zest – 1/2 pc
  • coconut milk – 50 ml
  • vanilla sugar – 1/2 tsp
  • zest of 1 lemon
  • zest of 1 lime
  • eggs – 2 pcs
  • egg white – 1 pc
  • sugar – 100 g

Method of preparation:

1. Preheat the oven to 180 degrees.

2. Pre-boil the rice and cool it.

3. Grate the zest of the orange, lime and lemon.

4. In a small saucepan, heat the milk, add the vanilla sugar, coconut milk, and citrus zest, cook over low heat for 5 minutes, then immediately remove from the heat.

5. Beat the eggs into a bowl and add 1 egg white, whisk together with the sugar until smooth. Add the hot milk mixture and mix well.

6. Put the rice in a baking dish and cover with the milk and egg mixture. Be sure to put this dish in a larger dish filled with water to create a water bath.

7. Bake for 60 minutes at 180 C.

Allow the rice pudding to cool slightly and you can eat it!
