Cheesecake is a delicious and easy-to-prepare dessert based on cottage cheese in the classic version. But it's worth noting that cheesecakes can be made without cottage cheese, and berries and jelly will add flavor to the dessert.

Ingredients:
Dough:
- flour - 220 g
- baking powder - 1 tsp.
- powdered sugar - 50 g
- butter - 120 g
- egg yolks - 3 pcs.
- sour cream - 30 g
Sour cream layer:
- sour cream from 20% - 600 g
- proteins - 3 pcs.
- corn starch - 50 g
- sugar - 140 g
- vanilla sugar - 1 package
- raspberries - 100 g
Method of preparation:
1. Mix flour, salt, baking powder, powdered sugar, add cold butter and grind everything into crumbs with your hands.
2. Add the egg yolks and sour cream, mix and knead the dough, it should be very tender and not stick to your hands, if it does, add a little more flour.
3. Freeze the dough in the freezer for 1.5 hours.
4. Take out the dough and divide into 2 parts, grate one part of the dough, spread it on the bottom of the baking sheet covered with parchment and bake for 10 minutes at 190 C.
5. For the sour cream layer: beat the egg whites and sugar until stiff peaks form, mix the sour cream with the starch and combine the two masses together.
6. Pour the sour cream layer onto the finished cake, spread it out, put the raspberries on top and grate the second part of the dough.
7. Bake the cake in a preheated oven to 160 degrees for 55 minutes.
After baking, let the cheesecake cool completely and refrigerate it without removing it from the pan for 5-6 hours or overnight.
