Better than any soup: hearty hodgepodge with smoked meats, olives and lemon
Solianka is one of the most satisfying, tasty, and easy-to-prepare dishes that is as good as any soup in terms of taste and preparation. All you need for this dish is a few types of smoked meats, as well as lemon, brine, and olives, which will give the dish an incredible flavor.
Chef Yulia Simonchuk shared a recipe for a delicious hodgepodge on Instagram that you can prepare in just 35 minutes.
- broth (meat, mushroom) or water – 3 liters
- different types of sausage and meat products – 650-700 g
- onion – 1 pc.
- carrots – 1 pc.
- pickled cucumbers – 3-4 pcs.
- cucumber brine – 1-2 cups
- olives – 5-10 pcs.
- lemon – 1 pc.
- sour cream for serving – 100 g
- tomato paste – 2 tbsp.
- oil – 1-2 tbsp.
- bay leaf, pepper, spices, herbs – to taste
Method of preparation:
1. Fry the onions and carrots in vegetable oil until soft and golden brown.
2. Add the cucumber grated on a coarse grater and fry for a few more minutes.
3. Put everything in a saucepan with boiling water (preferably broth, the taste will be more intense).
4. Cut all the sausages into strips and add to the pot after 5-7 minutes, simmer for 15-20 minutes, and then add the brine.
5. Stir everything, add bay leaf, pepper, spices, herbs, olives, tomato paste, and cook for another 2-3 minutes.
6. Turn off the heat, cover, and leave it for at least 30 minutes before serving.
For a more delicate flavor, add sour cream and lemon to the dish.
