An alternative to bread: hearty cabbage pancakes in 10 minutes
Pancakes are a delicious, simple, hearty, and very easy-to-prepare dish. They can be a great alternative to bread because they are based on flour dough. They can also be served for breakfast, with jam, and condensed milk, but you should also try cooking them with vegetables, such as cabbage.
Culinary expert Yevhen Klopotenko has shared a recipe for delicious cabbage pancakes on his website that you can prepare in just 10 minutes.
Ingredients:
Dough:
- Kefir – 300 ml
- Flour – 200 g
- Egg – 1 pc.
- Sugar – 1 tsp.
- Soda – 1/2 tsp.
- Sunflower oil – 3 tbsp (+100 ml for frying pancakes)
- Salt – 1 pinch
- Sour cream (for serving) – if desired
- Basil (for serving) – a few sprigs
Filling:
- Cabbage – 250-300 g.
- Lemon juice – 1 tbsp.
- Salt – 1 tsp.
Method of preparation:
1. Finely chop the cabbage and put it in a bowl, add lemon juice and salt to taste, mix with your hands, and leave it to marinate for 15 minutes.
2. Dough: Pour the kefir into a bowl, add the egg, salt and sugar, and baking soda along with the flour. Mix well until smooth, so that the dough is like thick sour cream.
3. Pour the oil into the finished batter and mix.
4. Squeeze the cabbage, add it to the dough, and mix.
5. Heat a frying pan and fry the pancakes.
Serve the pancakes with sour cream and sprinkle with basil.
