Venice salad for the New Year's table: how to make a spectacular dish
For the New Year, you can prepare salads from any vegetables, herbs, adding eggs, any cheese, avocado, pickled and fresh cucumbers, seafood, fillets, ham. It is best to dress salads with homemade mayonnaise and flavored oils.
The cook shared on Instagram a recipe for a delicious, hearty Venice salad made with chicken, vegetables, prunes, and cucumbers.
Ingredients:
- boiled chicken fillet - 400 g
- fresh champignons - 300 g
- potatoes - 3 pcs.
- fresh cucumbers - 2 pcs.
- hard cheese - 150 g
- chicken eggs - 4 pcs.
- prunes - 50 g
- mayonnaise - 100 g
- salt and ground black pepper to taste
- dill and parsley - 2-3 sprigs for garnish
- vegetable oil - 50 ml
Method of preparation:
1. Pour boiling water over the prunes, and leave for 10 minutes. Dry the dried fruits, and cut them into small cubes. Put the chopped prunes on the bottom of a salad bowl or a serving plate with a cooking ring.
2. Cut the boiled chicken fillet into cubes, put it on top of the prunes, and season with black pepper. Make a mesh of mayonnaise on top. Top with grated potatoes and mayonnaise.
3. Next, finely chop the fresh mushrooms and put them in a frying pan with heated oil. Stir fry the mushrooms until they are golden brown. At the end of cooking, salt the mushrooms and season with ground black pepper. Put the fried champignons in the salad in the next layer, brush with mayonnaise, and top with a layer of grated eggs, cheese, mayonnaise, and cucumbers.
Put the finished salad in the refrigerator for 1 hour.
