Tastier than borscht: healthy beetroot soup with an original taste
Beetroot is a unique vegetable that contains a lot of vitamins and minerals, and it can be used to make not only borscht, but also healthy and tasty salads, sauces, and even soups.
The cook shared a recipe for an original beetroot soup with tomatoes, herbs, and cheese on Instagram.
Ingredients:
- Small beets - 3-4 pcs.
- Tomatoes - 500 g
- A large onion
- A few cloves of garlic
- Oil - 2 tbsp
- Broth - 500 ml (water is also good, but broth is better)
- Salt and pepper
For serving:
- Feta
- Greens.
Method of preparation:
1. Bake the tomatoes in halves at 180 C for 30 minutes. Remove the peel.
2. Chop the onion, beetroot and garlic into pieces. Stew the onion and garlic until softened, add the beets, and stew for 10 minutes, add the tomatoes and the rest of the ingredients, and cook until tender. It will take 20 minutes.
3. Then blend the whole mass with a blender. If you plan to store it, cook it for 5 minutes in a blended form!
Serve with cheese and herbs!
