How to make crispy and golden homemade pasties: add one important ingredient to the dough

Chebureks are a dish that many people associate with home warmth and comfort. The most important thing is to make the dough correctly so that it does not absorb oil and turns out crispy and golden.

The idea of making golden and crispy pasties was published on the Instagram page of food blogger Kateryna with the nickname recepty przepisy. The constant ingredient that makes the dough crispy is vodka.

Ingredients:

  • flour - 400 g
  • salt without a slide - 1 tsp
  • boiling water - 200 g
  • vegetable oil - 40 g
  • vodka - 20 g

Ingredients for the filling:

  • minced meat - 300 g
  • salt
  • pepper
  • onion - 1 large
  • garlic - 1-2 cloves
  • cold water - 100 g
  • greens - optional

How to make the dough:

1. Add salt to the sifted flour and stir with a spoon.

2. Make a well in the middle, pour in boiling water, oil, and vodka, and stir the dough with a spoon.

3. Then knead it. The dough will be elastic and will not stick to your hands.

4. Wrap in plastic wrap or a bag and leave the dough to rest for 20 minutes.

5. For the stuffing, add the onion and garlic previously ground in a blender.

6. Add salt and pepper and pour in water. Mix the filling well.

7. Divide the dough into small pieces of 40-50 g, round, roll out thinly, and form chebureks in the usual way.

8. Fry in large quantities until golden brown.

9. To make the finished chebureks have more bubbles, you can additionally pour hot oil on one side with a spoon while frying the other.
