Blanched eggplant

1. Choose ripe eggplants that are free of cracks and damage, with smooth skin.

2. Cut into slices, plates, or cubes (depending on the dishes you plan to use them for).

3. Sprinkle the eggplants with coarse salt, mix, and leave for 1-2 hours at room temperature. Drain off the juice, rinse the eggplant under running water, and squeeze it lightly. This life hack will help you get rid of bitterness.

4. Boil water, add the sliced eggplant, and blanch for 3 minutes.

5. Drain the eggplants in a colander and let them cool to drain.

6. Place the eggplant in containers or freezer bags.

7. Place in the freezer.

Fried eggplant

1. Cut the eggplants into slices or cubes, sprinkle with salt, and leave for 1-2 hours to remove the bitterness. Rinse and dry.

3. Fry the eggplants in a preheated frying pan with a little vegetable oil, then transfer them to paper towels to absorb excess fat.

4. Place the fried eggplants in layers on a baking sheet, separating each layer with cling film or plastic bags. Put in the freezer until completely frozen (about 2-3 hours).

5. Put the frozen eggplants in bags or storage containers.

Baked eggplants

1. Rinse the eggplants, pat dry and, if desired, remove the skin.

2. Slice the eggplant and place it on a baking sheet greased with oil.

3. Bake at 180°C for 30 minutes, until soft.

4. Let the eggplant cool and drain off any excess fat.

5. Place the eggplant in bags or containers and freeze.

Whole eggplants

1. Rinse the small eggplants and pat dry. Make several punctures on each with a fork.

2. Place on a baking sheet and bake at 200°C for 30 minutes.

3. Let the vegetables cool, remove the skin, and squeeze lightly to remove excess juice.

4. Place in bags or containers and place in the freezer.

Recommendations for defrosting

Thaw eggplants gradually in the refrigerator or at room temperature to preserve their texture. Do not use the microwave or oven to defrost to avoid softening.
