Aluminum foil is an indispensable tool in the kitchen, used for cooking, storing, or packaging food. However, many people wonder which side of the foil is better to use – shiny or matte.

The FoodOboz editorial team will tell you whether there really is a difference between the sides of the foil. There are several important nuances in using this kitchen utensil.

Why foil has two different sides

The difference between the shiny and dull sides of the foil is due to the peculiarities of its production, not its functional properties. During production, aluminum foil undergoes a milling process. To make it extremely thin, two sheets of aluminum are rolled at the same time. The side of the foil that comes into contact with the other sheet remains dull, while the side that comes into contact with the rollers is polished and shiny.

Does it matter which side of the foil is rolled on

Both sides conduct heat equally effectively, ensuring even cooking.

The shiny side of the foil does reflect a small amount of heat radiation, but this effect is so insignificant that it does not affect the cooking process. The important thing is that foil works mainly on the principle of conduction – the transfer of heat through direct contact with a hot surface.

Exceptions: non-stick foil. There is a special type of foil with a non-stick coating. In this case, it is important to follow the instructions, as only one side of the foil (usually marked by the manufacturer) has non-stick properties.

Safety tips for using foil

Although aluminum foil is safe in most cases, there are a few important things to keep in mind:

  • Avoid contact with acidic or salty foods. Foods such as tomato sauce or vinegar-based marinades can cause a small amount of aluminum to seep into the food.
  • Persons with kidney impairment should minimize contact with aluminum materials, as the body has difficulty eliminating excess metal.

It doesn't matter whether you use the shiny or dull side of the foil for cooking, as both perform the same function. However, when using non-stick foil or working with acidic foods, you should follow special recommendations. The main thing is to use foil correctly so that it becomes your indispensable assistant in the kitchen.
