The iconic Spruce hut cake: how to make it at home
Spruce hut is a popular cherry cake in Ukraine. It consists of crispy tubes, which, after being greased with cream, become very juicy and soft. It is important to use pitted cherries. Berries that you have closed in a jar are ideal.
The idea of making the iconic Spruce hut cake was published on the Instagram page of food blogger Yulia Simonchuk (cook julia simonchuk). The cream is made with cream and cream cheese.
Ingredients for the dough:
- flour - 400-450 g
- butter - 200 g
- sour cream - 200 g
- baking powder - 2 tsp.
- vanilla sugar - 10 g
Ingredients for the cream:
- cream 33% - 500 ml.
- cream cheese - 300 g
- powdered sugar - 200 g
- pitted cherries - 700-800 g
- sugar - 100 g
- starch - 1.5 tbsp.
Method of preparation:
1. Melt the butter and let it cool slightly. Add the sour cream, vanilla sugar and sift in the flour and baking powder in parts.
2. Knead a soft and slightly loose dough (do not overwork the dough so as not to overwork it).
3. Wrap in cling film and refrigerate for an hour.
4. Meanwhile, remove the pits from the cherries, add sugar and starch (just before the process of forming the tubes).
5. Divide the dough into 15 equal parts.
6. Roll out each into a 25-centimeter-long layer.
7. Put the cherries, pinch and place on a baking sheet covered with siliconized parchment with the seam to the bottom.
8. Bake at 180 degrees until cooked through and set.
9. For the cream, whip the cold cream with the cold cream cheese and powdered sugar until thick (whipped very quickly).
10. To assemble the cake: grease the bottom of the dish a little with cream, put the first five tubes, cover with cream, then put the next 4 tubes on top and cream again. Repeat until you run out of tubes.
11. Grease the sides with cream as well.
12. Sprinkle with grated chocolate or cocoa and refrigerate overnight.
13. Place at room temperature for an hour before serving.
