How to make the perfect moti dough: exact step-by-step recipe

Moti is a traditional Japanese dessert made from choux pastry and a variety of fillings. Of course, it is the filling that plays the main role in shaping the flavor of the product, but the dough must also be prepared correctly to ensure the perfect structure of the dish.

A food blogger with the nickname julia food blog ua shared on Instagram how to make moti dough so that the cake turns out perfectly. She also shared a recipe for a raspberry filling that is perfect for moti.

Ingredients for 20 pieces of dough:

  • Glutinous rice flour - 140 gr
  • Corn starch - 50 gr
  • Sugar - 135 g
  • Pepsi or other carbonated drink - 330 ml

Ingredients for the filling:

  • Raspberry puree - 200 g
  • Gelatin - 6 g + 30 ml of water
  • Corn starch - 4 g
  • Sugar - 70 g

Ingredients for the cream:

  • Raspberry puree - 160 g
  • Sugar - 140 g
  • White chocolate - 80 g
  • Cream - 160 ml
  • Cream cheese - 540 g
  • Gelatin - 20 g + 100 ml of water

How to prepare the dough and form the cakes:

1. Mix starch, sugar, and flour. Add the liquid.

2. Blend and pass the mass through a sieve.

3. Cover tightly with cling film and microwave for 4 minutes.

4. Blend again, cover with cling film for the second time, and microwave for another 4-5 minutes. The dough should be sticky.

5. Let it cool slightly. Put it on a silicone mat greased with oil.

6. Beat it with a rolling pin for a few minutes. Sprinkle with cornstarch and roll out into a thick layer.

7. Cut out circles 5 cm in diameter.

8. Stretch each circle a little and put the filling in the center.

9 Seal the opposite edges.

10. Put the moti on a silicone mat dusted with starch. Cover with cling film and refrigerate for 2-3 hours.

How to prepare the filling:

1. Mix starch with sugar.

2. Add to the mashed potatoes. Cook for 30 seconds after boiling.

3. Pour into molds filling to the middle (hemispheres with a diameter of 3 cm).

4. Freeze.

The method of preparation of the cream:

1. Add sugar to the mashed potatoes. Bring to a boil and add the chocolate.

2. Add gelatin. Combine with cream and cottage cheese. Blend until smooth.

3. Fill the hemisphere up to halfway (5 cm in diameter) with the mass.

4. Spread the frozen raspberry filling in the center, and fill the top with the curd mass to the end. Freeze.
