You've never cooked it like this before: pickled herring in black currant and wine vinegar

Surprise your guests on New Year's Eve and make this herring in currants. For cooking, you will need frozen berries, which you most likely prepared in the summer. The fish will have a new interesting and rich flavor.

The idea of cooking marinated herring in black currant was published on the Instagram page of food blogger Olena Kudriavtseva (maslom_wgoru). Wine vinegar will add a special piquancy.

Ingredients:

  • 300 g herring
  • 150 g of frozen black currants
  • 1 red onion
  • 50 g of sugar
  • a few red peppercorns
  • 50 ml of wine vinegar
  • 100 ml of water (can be replaced with blackcurrant juice if you have natural juice with a minimum of sugar)
  • 1 bay leaf

Method of preparation:

1. Cut onion into thin rings.

2. Cut herring into small pieces.

3. Defrost black currants and beat them in a blender. Do not blend too hard. They should release the juice only a little.

4. Put everything except the herring and onion in a small saucepan and put on the fire. Let it boil for 5-10 minutes and cool.

5. Put the herring and onions in a jar or other container in layers and pour the cold marinade over them. Put in the refrigerator for 2-3 days. The longer the herring stays in the sauce, the more tender and purple it will become.
