Eggs are a very useful and valuable product that everyone should eat, unless they are allergic and their health condition allows them to do so. According to experts, people with high cholesterol should strictly avoid eggs and egg dishes. Eggs can be used to make delicious and light omelets, salads, spreads, and simply stuffed with delicious fillings.

1. Stuffed eggs with cheese and bell pepper
Ingredients:
- eggs - 8 pcs.
- bell pepper - 1/2 pc.
- lemon - 1/2 pc.
- hard cheese - 50 g
- mayonnaise - 6 tbsp
- mustard - 1 tbsp.
- salt and pepper - to taste
Method of preparation:
1. Boil the eggs hard-boiled, let cool, peel and cut into halves. Separate the whites from the yolks.
2. Peel the seeds from the peppers and cut them into small cubes.
3. Squeeze the juice from the lemon. Grate the cheese on a fine grater.
4. Mash the yolks with a fork and mix with pepper, cheese, lemon juice, mayonnaise and mustard, pepper, salt and mix.
5. Stuff the eggs and refrigerate for 10-15 minutes before serving.
2. Stuffed eggs with mushrooms
Ingredients:
- champignons - 200 g
- onion - 1 pc.
- green onions - to taste
- eggs - 8 pcs.
- mayonnaise - 2 tbsp.
- vegetable oil - 2 tbsp
- salt, pepper - to taste
Method of preparation:
1. Finely chop the mushrooms and onion, fry in vegetable oil for 5-7 minutes, transfer to a blender and chop.
2. Finely chop the green onion.
3. Hard-boil the eggs, cool, peel, and cut into halves.
4. Separate the yolks from the whites and mash with a fork. Mix with the mushroom mixture, add mayonnaise, salt and pepper.
5. Stuff the squirrels with the filling and sprinkle with green onions.
Leave in the refrigerator for 15-20 minutes before serving.
3. Stuffed eggs with pickled cucumber
Ingredients:
- eggs - 6 pcs.
- pickled cucumbers - 1-2 pcs.
- cucumber brine - 1 tsp.
- any greens - to taste
- mayonnaise - 2-3 tbsp.
- mustard in grains - 1 tsp.
- salt and pepper - to taste
Method of preparation:
1. Boil the eggs hard-boiled, cool and peel, cut in half and separate the whites from the yolks.
2. Cut the cucumbers into thin slices and finely chop the greens. Add the yolks, mash them, then add mayonnaise, brine and mustard, salt and pepper, and mix.
3. Stuff the egg whites, top with a few slices of cucumber and sprinkle with greens.
Chill the dish in the refrigerator for 15-20 minutes before serving.
