Stewed mackerel in tomato sauce: how to cook healthy fish for a snack
Mackerel can be pickled, baked, added to salads, and made into delicious spreads. You can even stew mackerel with vegetables and tomato sauce.
Chef Valeriy Ponomar shared a recipe for delicious mackerel in tomato sauce and vegetables on Instagram.
Ingredients:
- Mackerel - 2 pcs.
- Onions - 3 pcs.
- Carrot - 1 pc.
- Celery stalk - 2 pcs.
- Bay leaf - 1-2 pcs.
- Allspice - 4 pcs.
- Peppercorns - 5-6 pcs.
- Coriander seeds - 10 pcs.
- Water - 500 ml (hot)
- Thyme - 2 sprigs
- Salt - to taste
- Tomato paste - 1 tbsp (not sour)
- White table wine - 4 tbsp. l.
Method of preparation:
1. Fry the onion until golden brown, then add the carrots and celery stalk, and fry for another 2 minutes.
2. Add a tablespoon with a slide of tomato paste, and fry until the sweet aroma and bright color appear, only then pour in the wine and evaporate the alcohol for a minute.
3. Pour in water, add all the spices, cover, and cook over low heat for 20 minutes.
4. Add the chopped mackerel and simmer for another 25 minutes over low heat, covered with a lid.
5. Carefully remove the fish, strain the broth through a sieve from the vegetables, boil over maximum heat for one time, do not cover. Turn the heat down to low to medium, put the fish back in, and cook until the sauce texture forms (about 10 minutes), periodically spoon the sauce over the fish.
