Georgian khashlama for a picnic or a festive table that is tastier than kebab
Summer meat dishes can include not only kebab but also cutlets with vegetables, chops and vegetables roast. Another option is the Georgian meat dish called Khashlama made with veal, as well as fresh vegetables and spices.
Cook Tetiana shared on Instagram a recipe for a delicious traditional Georgian khashlama, which is prepared very simply and quickly.
Ingredients:
- veal - 1.5 kg
- onion - 3-4 pcs.
- carrots - 2-3 pcs.
- eggplant - 2 pcs.
- potatoes - 6-7 pcs.
- red pepper - 4 pcs.
- tomatoes - 5-7 pcs.
- garlic - 5-7 cloves.
- chili pepper - 2 pcs.
- parsley - bunch
- cilantro - bunch
- rosemary - a few sprigs
- salt, pepper, ground coriander, hmeli-suneli
Method of preparation:
1. Clean meat from veins and film and cut into large pieces.
2- Chop the vegetables randomly but coarsely.
3. Heat oil in a frying pan and put the meat. Fry until browned. Salt, pepper, add spices and cover with a lid and braise until cooked through.
4. Put half of the garlic, carrots, onions, potatoes and eggplants in layers, then the other half of the garlic, sweet peppers, hot peppers, tomatoes and rosemary. Season with salt and spices.
5. Cover with a lid and stew until tender.
6. If necessary, add a little water or light beer.
At the end, when all the vegetables are almost done, sprinkle with finely chopped parsley and cilantro!
