If you don't have time to cook the first course, this soup is a great idea. It is prepared on the basis of vegetables and cereals, meat can be omitted. It turns out to be dietary, low-calorie and delicious.
Food blogger Victoria with the nickname vika_tasty shared a recipe for a quick vegetable soup without meat on her Instagram page.
Recipe for soup with vegetables and rice
Ingredients for 2 liters of water:
- potatoes - 3 pcs.
- carrots - 1\2 pcs
- onion - 1 pc
- vegetable oil - 3 tbsp.
- round rice - 3-4 tbsp.
- herbs
- salt, pepper
Vegetables for soup
Method of preparation:
1. Grate the carrots on a grater.
2. Chop the onion.
3. Cut the potatoes into cubes.
Soup without meat
4. In a saucepan pour water and put on fire. Put vegetables, cereals, add oil. The whole cooking process takes 40 minutes (about 20 minutes from the moment of boiling).
5. Add salt and pepper at the end of cooking.
Soup with rice
6. Serve with greens.
