Do you need to wash frozen and fresh meat and what does the marinade have to do with it: we share tips from chefs
Meat is a healthy and essential product that is loved by almost everyone. There are different ways to cook meat, but the best way is to bake it in the oven. Very often, housewives don't know what to do – whether to wash raw and frozen meat before cooking or not.
The FooOboz editorial team shares useful tips from chefs on whether to wash meat after defrosting and fresh meat.
Why you should not wash meat
Culinary experts say that since the temperature inside the meat reaches 55-60°C during heat treatment, all pathogens are killed, so there is no need to wash it before frying, boiling, baking, and stewing!
Marinade disinfects meat
It's also worth noting that grill or barbecue marinade disinfects meat, and brine works the same way if, for example, meat is smoked or cured.
Do you need to wash frozen meat
The bacteria in frozen meat are killed by low temperatures on the product, which is why you don't need to wash it after defrosting!
What happens if you do wash the meat
The so-called Maillard reaction between sugars and acids is triggered when meat comes into contact with water, both raw and frozen. Thanks to this reaction, meat at 110 C develops a brown crust on top, and juices and flavors are sealed inside. However, water begins to evaporate from a washed piece of meat at 100 C, which prevents the crust from forming!
