Cottage cheese stollen for Christmas 2025: how to make a delicious traditional pastry
Stollen is a traditional German Christmas pastry shaped like a baby wrapped in a white diaper. It can be prepared in advance because the shelf life of stollen is quite long.
Chef Liza Hlinska shared a recipe for stollen on her Instagram that anyone can make. As a result, the festive table will be filled with delicious, fragrant pastries that will create the right mood.
Ingredients
- Soft butter – 200 gr
- Sugar – 6 gr
- Cottage cheese 5-9% – 200 g
- Eggs – 2 pcs
- Lemon zest – 1 pc
- Orange zest – 1 pc
- Baking powder – 10 g
- Flour – 500 g
- Light raisins – 250 g
- Dried blueberries – 200 g
- Black rum – 150 ml
Additional ingredients
- Melted butter – 200 gr
- Powdered sugar – 200 g
Method of preparation
1. Prepare the dried fruits. Rinse raisins and blueberries: pour boiling water for 1 minute, drain, and rinse under cold water.
2. Pour rum over the dried fruit, cover with cling film, and leave overnight. You can also use the microwave: heat the dried fruit with rum for 30-40 seconds, stirring occasionally.
3. Put the dried fruit in a sieve and let the rum drain.
4. Prepare the dough. Mix the softened butter, lemon, and orange zest and beat.
5. Add the sugar and mix again.
6. Add the eggs and cottage cheese and mix again.
7. Combine the flour and baking powder and mix with the cottage cheese mixture.
8. Add the soaked dried fruits to the dough and mix.
9. Divide the dough into 3 parts and shape stollens.
10. Put the parchment on the baking sheet and put it in the oven at 175-180°C for 40-45 minutes.
11. Brush the hot stollen with melted butter on all sides and then sprinkle with powdered sugar.
