Hearty strudel with ready-made phyllo dough: what to make savory filling from

Strudel is not only a sweet apple dessert but also a hearty appetizer. In the savory version, instead of fruit, you need to put mashed potatoes with vegetables. You don't have to roll out the dough because you can use ready-made phyllo.

The idea of making a salty strudel with potatoes was published on the Instagram page of food blogger Kateryna with the nickname ketiv. The dish is baked for a maximum of half an hour.

Savory strudel recipe with potatoes

Ingredients:

  • boiled potatoes - 250 g (3-4 medium potatoes)
  • carrots - 1 medium
  • broccoli - 1/2 medium head
  • fresh frozen green peas - 50 g (2 tbsp)
  • cream cheese - 100 g (4 tbsp with a slide)
  • chicken egg - 1 pc.
  • phyllo dough - 3-4 sheets
  • melted butter - 20 g
  • milk - 20 g
  • spices to taste: black pepper, paprika
  • fresh herbs: dill or parsley

Method of preparation:

1. Boil potatoes with their skins.

2. Finely chop carrots and broccoli and boil with peas until half-cooked.

3. Grate potatoes on a coarse grater, add cream cheese, egg, herbs, and spices and mix well.

4. Prepare phyllo dough: brush each sheet with melted butter, except for the last one, and stack them on top of each other.

5. Put the potato mixture on top and spread the vegetables evenly.

6. Wrap tightly in a roll and brush the top with milk (and with melted butter 5 minutes before cooking).

7. Put the strudel on a baking sheet with parchment and bake in a preheated oven at 180 degrees for 30-35 minutes.

8. Serve with Greek yogurt or sour cream.
