Eggplants for the winter, like kebab: share the cooking technology

If you really want kebab in the winter, open canned eggplant. You can close the vegetable so that it tastes like meat. And for a festive table, this appetizer is perfect.
The idea of cooking canned eggplants for the winter, like kebab, was posted on the Instagram page of food blogger Myroslava Krutiy (miroslavakrutii).
Ingredients:
- eggplant - 2 kg.
- onion - 0.5 kg (more is possible).
- garlic - 1 pc.
- barbecue seasoning - 1 pack.
Method of preparation:
1. Peel the eggplant and cut it in half.
2. Cut into large pieces.
3. Fry in vegetable oil on both sides (you do not need to pour a lot of oil).
4. Cut the onion into half rings. Garlic - in slices.
Ingredients for the marinade:
- water - 150 g.
- salt - 1.5 tbsp
- sugar - 2 tbsp.
- vinegar - 80 ml.
Method of preparation:
1. Boil the marinade to dissolve the sugar and salt.
2. Add 80 ml of vinegar, bring to a boil and leave to cool.
3. Put in a saucepan or bowl in layers: eggplant, onion, garlic, barbecue seasoning, etc.
4. Pour the vegetables with cold marinade, cover and put the weight (there is very little marinade, don't worry, the weight will make it more) and leave in the refrigerator for 12 hours.
5. You can eat right away or cover for the winter.
6. Put in sterilized jars in layers: onion, eggplant, sprinkle with barbecue seasoning, garlic, pour in the marinade and sterilize for 10 minutes, roll up and wrap.
