What is the secret to making fluffy pancakes: you have always added kefir incorrectly

To make sweet pancakes fluffy, they are cooked with kefir. But it's not enough to add the product to the dough, because it has to be done correctly. The ingredient must be at the right temperature.

The idea of making fluffy and airy pancakes was published on the Instagram page of food blogger Polina with the nickname polli cooking. The cook notes that kefir should be preheated.

Ingredients:

  • eggs - 1 pc.
  • sugar - 3 tsp.
  • salt - 0.5 tsp.
  • kefir - 300 ml.
  • flour - 280 g
  • soda - 0.5 tsp.
  • baking powder - 1 tsp.
  • vanilla
  • oil for frying - 100 ml.

Method of preparation:

1. Crack a room temperature egg into a bowl.

2. Add sugar (no more than 2 tablespoons) and salt, mix.

3. Pour in the preheated kefir.

4. Pour in the flour and add the baking soda and baking powder. Be sure to add these two components, do not replace one with the other, but add both.

5. Add vanilla, vanilla sugar, vanilla extract, if desired.

6. Knead a homogeneous, thick dough.

7. Add oil to the pan, exactly the amount specified in the recipe - this is important.

8. The pancakes should be fried as if in deep fat. They will not be greasy.

9. To ensure that the pancakes are the same size and have a nice shape, it is better to put the dough in a pastry bag or ziplock bag.

10. Put the pancakes on a well-heated frying pan with oil, turn the heat low.

11. Fry the pancakes to 80%, and then turn them over and fry for another minute.

12. Put the pancakes on a plate with a paper towel and let stand for 2-3 minutes.
