Ingredients for the dough
- Flour - 330 g
- Cocoa - 65 gr
- Baking powder - 13 g
- Salt - 1/3 tsp
- Sugar - 40 g
- Cold butter - 200 g
- Sour cream 15-20% - 200 g
Ingredients for the cherry filling
- Cherries - 800 gr
- Sugar - 150 gr
- Corn starch - 70 g
Ingredients for the cream
- Sour cream 20% - 400 g
- Cream from 33% - 450 ml
- Powdered sugar - 90 gr
- Melted milk chocolate - 100 g
Method of preparation
1. Prepare the dough. Combine flour, cocoa, salt, and baking powder.
2. Add the butter, cut into small pieces. Use a mixer, a fork, or your hands to grind everything into crumbs.
3. Add the sour cream and knead the dough, which we hide under the cling film. Put it in the refrigerator for one and a half to two hours.
4. Prepare the filling. Mix sugar with starch and add to the cherries.
5. After boiling, cook for about a minute, stirring constantly.
6. Let it cool down.
7. Prepare the cream. Beat the powdered sugar, chilled cream and sour cream for a few minutes until thickened.
8. Add the melted warm chocolate and stir until smooth.
9. Form the tubes. Divide the dough into 15 pieces, roll out a thin strip from each, and smooth the edges. The length of the workpiece is 27-30 cm.
10. Using a pastry bag, spread the filling. Carefully close the edges.
11. Put the pieces on a baking sheet with the seam down.
12. Bake the tubes at 175 degrees for 23-25 minutes.
13. Assemble the cake. Spread cream on the base. Put 5 tubes, then cream again.
14. Next, put 4 tubes. And thus we form a slide cake. At the end, you just need to put one tube.
15. Top the cake with the remaining cream, sprinkle with chopped chocolate biscuits and refrigerate for at least 10 hours.
