Atmospheric citrus cupcake: what to cook on Christmas Eve

With the arrival of autumn, people notice that they are constantly craving something sweet. But purchased sweets are not always tasty and can bring gastronomic pleasure. Therefore, in such periods, it is worth preparing them yourself.

For example, food blogger Liza Hlinska shared on Instagram how to make a citrus cupcake. This is an atmospheric dish that is perfect for the Christmas table. In addition, this type of baking has a long shelf life and incredible taste.

Ingredients

  • Butter – 150 gr
  • Powdered sugar – 150 gr
  • Eggs – 3 pcs
  • Flour – 200 gr
  • Baking powder – 8 g
  • Spices (cinnamon, ginger, nutmeg) – 1 tbsp
  • Vanilla sugar
  • Mandarin and orange zest

Ingredients for the syrup

  • Orange or tangerine juice – 100 ml
  • Orange or tangerine zest – 1 pc
  • Water – 50 ml
  • Sugar – 60 g

Ingredients for the sugar glaze

  • Tangerine juice – 30 ml
  • Powdered sugar – 100 g
  • Mandarin zest

Method of preparation

1. Mix powdered sugar with spices.

2. Add fresh citrus zest. Mix well.

3. Mix the flour with the baking powder.

4. Beat the butter at room temperature. The butter should lighten and increase in volume.

5. Add the icing sugar. Mix well.

6. Add the eggs at room temperature. Mix well.

7. Add flour and baking powder, and mix.

8. Prepare the cake mold. Grease the bottom and edges of the mold with soft butter and sprinkle with flour. Put the dough into the mold. Keep in mind that the dough will increase in volume by 2 times.

9. Bake in an oven preheated to 170 degrees for 30-35 minutes. Check the readiness with a wooden skewer. Remove the cake from the mold.

10. Prepare the syrup. Remove the zest from the tangerine, squeeze out the juice, add water and sugar. Boil the syrup for another 2 minutes after baking. Strain the syrup.

11. Soak the hot cupcake with hot syrup. Use all the syrup.

12. Remove the zest from the tangerine, and add the juice and powder. Cover the cooled cupcake with icing.

13. Leave it at room temperature to dry.
