- eggplant - 2 kg
- hot pepper - 3 pcs
- garlic - 5 cloves
- parsley
Ingredients for the marinade (250 ml glass):
- water - 1/2 cup
- sugar - 1 cup
- oil - 1 cup
- vinegar - 200 g
- salt - 2.5 tbsp
Method of preparation:
1. Cook the eggplant for 15 minutes from the moment of boiling and cool.
2. Cut pepper, garlic and parsley into small pieces.
3. Combine everything for the marinade.
4. Bring to a boil and cool.
5. Slice the eggplant and put it in a bowl.
6. Sprinkle each layer with the vegetable mixture.
7. Pour the marinade over and refrigerate.
8. After 2 days, the eggplant will be ready to eat, but you can leave it for longer.
