Flavored Paska bread with candied fruit in 4 hours: a recipe for the perfect curd dough
The main symbol of the bright holiday of Easter is homemade, flavorful pastries - Paska bread (Easter cake). Paska can be made from different doughs and cheese. The most important thing in cooking is to make a successful, tasty dough on which the structure of the pastry depends.
Culinarian Victoria shared on Instagram a recipe for a delicious Paska bread with citrus syrup and candied fruits.
Marinade for candied fruits:
- raisins, candied fruits - 100 g
- sugar - 100 g
- water - 100 ml
- orange liqueur - 100 gr
Method of preparation:
1. Mix water and sugar, bring to a boil, remove from heat, add liqueur, stir and pour hot syrup over candied fruit. Cover and leave to infuse for a day.
Dough:
- flour - 530-560 g
- cottage cheese - 150g
- yeast - 5 g
- candied fruit syrup - 100 ml
- cream - 100 ml
- eggs - 2 units
- sugar - 100 g
- zest of 1 orange
- vanilla sugar - 1 tbsp.
- salt - a pinch
Method of preparation:
1. Mix flour with yeast and salt.
2. Rub the cottage cheese through a sieve, add vanilla sugar and butter, mix with a mixer. Now add cream, sugar, eggs, and mix again. Add the orange zest and candied fruit syrup, mix well. Add the flour in 2 stages, first mix with a mixer, then with your hands. The first 10 minutes the dough will be sticky, you can add a little flour and knead the dough for 15-20 minutes.
3. Sprinkle the candied fruit with flour, put it on the dough and mix it in. Put the dough in a draft-free place to rise for 1 hour, cover with cling film and a towel.
4. Put the dough into the molds, filling them 1/2 full. Cover with a towel and leave to rise for another 1 hour.
5. Brush the Paska bread with egg yolk and bake for 35-40 minutes at 180°C.
