What to make delicious green borscht with besides sorrel: a truly Ukrainian dish

This green borscht is truly Ukrainian. This is because it is made from nettles. This kind of greenery is definitely found in every village yard or garden. And right now, while it is young and fresh, it is worth using it to prepare a very flavorful dish. The taste will pleasantly surprise you.

The idea of cooking nettle borscht was published on the Instagram page of food blogger Daryna with the nickname recepti_dariko. Nettles are cooked very quickly.

Ingredients:

  • meat - 500 g
  • young nettles - 200 g
  • potatoes - 4-5 pcs.
  • carrots - 1 pc.
  • green onions - 1 bunch
  • oil - 1-2 tbsp
  • dried onions and roots for broth
  • salt, pepper, dry garlic, bay leaf
  • fresh herbs, boiled eggs and sour cream for serving

Method of preparation:

1. Cook meat with onion until the broth is ready for an hour and a half.

2. Blanch 200 grams of young nettles for 1-3 minutes. The broth is ready,

3. Strain the meat and set aside.

4. Return the broth to the fire and add diced potatoes (3-4 potatoes). Chop a bunch of green onions and grate one carrot on a coarse grater.

5. Fry the carrots for a few minutes. Add green onions and 1 teaspoon of dry garlic. Stir and fry for another 5 minutes. Boil 4 eggs separately.

6. Divide the meat and return to the broth.

7. Rinse and peel the young nettles, leaving only the leaves.

8. Remove the tops and chop them. When the potatoes and meat have boiled and everything has been cooked for 5 minutes, add the roast.

9. Season with salt and bay leaves.

10. After 15 minutes, add nettles. Boil it for 2-3 minutes.

11. Add lemon juice and diced eggs. You can serve the eggs immediately on a plate. You can also add fresh herbs and sour cream.
