What to cook thin pancakes with besides milk: they will not tear apart

Traditional thin pancakes are usually made with milk. But to make sure that the pancakes do not tear apart and you can wrap the filling in them, choose kefir. The texture of the products will be very tender and porous.

The idea of making thin pancakes with kefir that don't tear apart was published on the Instagram page of food blogger Natalia with the nickname talli_sun. Thanks to the kefir, the batter will be loose and bubbles will appear on it.

Ingredients:

  • eggs - 2 pcs.
  • sugar - 1-2 tbsp
  • salt - 0.5 tsp
  • vanilla sugar - 0.5 tsp.
  • kefir - 300 ml
  • baking soda - 1 tsp
  • vegetable oil - 30 ml
  • boiling water - 150 g
  • flour - 130-150 g

Ingredients for the filling:

  • apples - 2 pcs.
  • sugar - 2 tbsp
  • butter - 30 g
  • cinnamon - 0.5 tsp.

Method of preparation:

1. Add baking soda to kefir, mix and let stand for 10-15 minutes.

2. Beat eggs with sugar, salt, and vanilla sugar.

3. Add half of the kefir and flour. Mix well.

4. Add the rest of the kefir and mix again.

5. Pour a thin stream of boiling water, stirring it quickly.

6. Finally, add oil, mix well, and let the dough rest for 15 minutes.

7. Fry the pancakes on both sides until golden brown.

8. Peel the apples and cut them into small cubes.

9. Melt butter in a frying pan, add apples, sugar, and cinnamon.

10. Cook until the apples are soft and the sugar is caramelized.

11. Wrap the filling in pancakes.
