What delicious pastries to make for Christmas: raisin and cinnamon crunch

Christmas is coming soon. This is a very warm and family-friendly holiday, for which you should definitely bake flavorful pastries and treat your family. A great option would be to make a fluffy cranberry cobbler with raisins and cinnamon.

The idea of making a Christmas crunch with raisins is published on the Instagram page of food blogger Katia with the nickname katia_cooking_. It is delicious with milk and cocoa.

Ingredients:

  • 380 g. sifted flour
  • 100 ml. warm milk 3,2%.
  • 80 g. sugar
  • 2 eggs
  • 1 tsp. turmeric
  • 100 g. soft butter 82% fat
  • 20 g. dry yeast (or 90 g. fresh)
  • 10 g. vanilla sugar
  • 1 tsp. lemon juice
  • a pinch of salt
  • a pinch of nutmeg

Ingredients for the filling:

  • 50 g. blue raisins
  • 50 g. light raisins
  • 50 g. cranberries
  • 80 g. candied fruit
  • 30 g. dried apricots
  • 50 g. rum for soaking raisins
  • 50 g. soft butter
  • 2 tbsp. sugar
  • 1 tsp. cinnamon

Method of preparation:

1. For the dough, add 1 tbsp of sugar and yeast to warm milk, stir and set aside in a warm place to activate (20 minutes).

2. Beat eggs well with sugar, vanilla sugar and salt.

3. Add a pinch of nutmeg and turmeric to the sifted flour, pour in the dough, egg mixture, mix everything and add lemon juice with soft butter.

4. Knead the dough for 15 minutes. At first it will stick to your hands, then it becomes elastic (do not add any more flour). Try not to warm the dough in your hands.

5. Cover and place in a warm place. To speed up this process, you can put the dough in a warm oven preheated to no higher than 50 degrees.

6. While the dough is rising, wash the raisins and pour over the rum.

7. Knead the dough, sprinkle a little flour on the work surface, roll it out into a thin layer and brush with soft butter.

8. Sprinkle with cinnamon sugar, raisins, cranberries, candied fruit, dried apricots (finely chopped), and nuts if desired.

9. Roll into a roll, cut in half, but not completely (leave about 4-5 cm).

10. Twist the two parts of the dough together and form a ring, which should be well sealed at the bottom.

11. Put into a mold, cover and leave in a warm place (you can put it back in the oven for about 40 minutes).

12. Bake in a preheated 180 degree oven for 45-50 minutes.

13. If the crunch is browned on top, but not yet ready, cover with foil or parchment to prevent it from burning.

14. Take out the finished crunch, cover with a towel and let it cool for 40 minutes.

15. Sprinkle with powdered sugar.
