Onion soup: the perfect dish for cold weather
The onion soup was a soup for the French poor. The history of its origin goes back a long way, so it's impossible to say which of the many recipes that have survived to this day is original.
And recently, celebrity chef Volodymyr Yaroslavskyi shared the recipe for onion soup that he likes best on his Instagram. According to the chef, there is a legend that this soup was invented by Louis XIV.
Ingredients for 3 large soup bowls
- peeled onions - 500 gr
- butter - 60 gr
- olive oil - 20 gr
- rich broth - 750 ml
- white dry wine - 75 g
- cognac - 1 tbsp
- allspice and black pepper
- nutmeg
- thyme
- sourdough bread
- Gruyère cheese - 100 g
Method of preparation
1. Cut onions into strips and put them in a frying pan with olive oil. Fry over low heat for 35-40 minutes.
2. After 20 minutes of frying, reduce the heat and add salt. It is important to scrape off the part of the onion that begins to stick.
3. When the onions are well-fried and stewed, add a pinch of sugar, peppers, thyme, and cognac. Stew for 1 minute and add wine.
4. Allow the wine to evaporate and add broth, salt to taste and nutmeg.
5. Pour the finished soup into bowls. Put a piece of bread on top (ideally, if it is slightly stale) and sprinkle with cheese.
6. Bake in the oven at the top grill until golden brown.
