How to pickle delicious cherry tomatoes for winter: they will not crack

Pickled cherry tomatoes are very convenient to open at a time. Vegetables are usually harvested in small jars, so a twist won't last for weeks in the fridge. If you use the following technique, the tomatoes will also be very firm and will not crack in the jar.

The idea of cooking delicious cherry tomatoes for lunch was published on the Instagram page of food blogger Yana with the nickname gotovim_s_yanou. Vegetables will be the perfect addition to any porridge, meat and fish.

Ingredients:

  • 2 cups of cherry tomatoes
  • 6 cloves of garlic
  • 1 onion
  • dill (optional)
  • 1 liter of water
  • 4 tbsp of sugar
  • 1 tbsp of salt
  • 4 tbsp of vinegar
  • black peppercorns

Method of preparation:

1. To determine the exact amount of tomatoes you need to marinate, pour them into the empty jars upside down

2. Cut the onion into half rings and the garlic into slices.

3. Pour boiling water over the jars and lids.

4. Put a few onion rings, some garlic, and a sprig of dill on the bottom of each jar.

5. Add half of the cherry tomatoes.

6. Then make another layer with onions, garlic and dill.

7. Add a few black peppercorns. Add tomatoes up to the neck of the jar.

8. Pour boiling water over the jars and cover for 20 minutes.

9. Drain the water from the jars into a separate saucepan. Two jars make about 1 liter of water. Add salt and sugar.

10. Bring to a boil over high heat. When the salt and sugar are completely dissolved, pour vinegar and remove the marinade from the heat.

11. Pour the boiling marinade into the jars with the tomatoes upside down.

12. Close the lids.

13. Turn the jars upside down and cover with a warm blanket.

14. Leave to cool completely.
