How to make pancakes without eggs: a budget option for a dish
To make the pancakes golden and fluffy, housewives often add a lot of eggs. But there is a much more budget-friendly way to prepare such a simple dish. Baking soda and kefir are ideal for this purpose.

Ingredients:
- kefir – 300 ml
- wheat flour – 450 g
- baking soda – 1 tsp.
- lemon – 1 piece (optional)
- sugar – 5-6 tbsp
- oil for frying
Method of preparation:
1. Pour the kefir into a deep bowl.
2. Add baking soda, mix and leave for 5 minutes.
3. Wash the lemon, and pour over boiling water. Remove the zest and squeeze the juice.
4. Add the zest, lemon juice, and sugar to the kefir, and mix lightly. A lush cap of bubbles will appear on the surface of the kefir – this is normal.
5. Add the sifted flour.
6. Mix the resulting mass thoroughly with a silicone spatula or spoon. The dough should be airy and homogeneous.
7. Heat the frying pan well and add oil.
8. Add 1 tablespoon of batter. Bake the pancakes until golden brown on both sides.
9. Pancakes cooked with kefir without adding eggs are very fluffy and do not fall off after they cool down.
10. Serve with sour cream or syrup.
