To preserve mushrooms for the winter, housewives make various preparations or simply dry them. Drying is one of the best ways to preserve the taste and flavor of mushrooms. And in order for mushrooms not to spoil during storage, you need to know a few rules.

Basic rules for drying mushrooms
- Dry mushrooms in the oven or in a special dryer. You can also string them and hang them over the stove.
- During the drying process, it is important not to exceed the temperature. It should not exceed 40-50 degrees. This is when they dry properly and the water inside has time to evaporate.
- Mushrooms should never be washed before drying as this slows down the process.
- After drying, the mushrooms should be completely cooled so that they do not become soggy during storage in a jar.
Preparing mushrooms for drying
1. First, carefully sort through the mushrooms and remove moss and sand. Wormy mushrooms or those with traces of snails are not suitable for drying.
2. After that, cut the mushrooms into small slices or thick pieces. They should not be too small as they will shrink significantly during drying.
3. Dry the mushrooms in the way that works best for you.
4. Be sure to cool the dried mushrooms and put them in sterile jars. Close them hermetically. Store in a dry, cool and dark place.
